Pepperoni Pizza Puffs

Ingredients


  • 3/4 cup flour


  • 3/4 tsp baking powder


  • 1 Tbs Italian seasoning


  • pinch of salt (optional)


  • pinch of red pepper flakes (optional)


  • 3/4 cup milk


  • 1 egg, lightly beaten


  • 1 cup shredded mozzarella cheese


  • 1/4 cup grated Parmesan cheese


  • 1 cup cubed pepperoni


  • 1/2 cup prepared pizza sauce for dipping



Directions



  1. Preheat oven to 375 degrees. Grease a 24-cup muffin pan. In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes. Whisk in the milk and egg. Stir in the mozzarella, Parmesan and pepperoni. Let stand for 10 min.


  2. Stir the batter and divide among the muffin cups. Bake until puffed and golden. 20-25 minutes.


  3. Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.

Note: I didn't use all 24 cups. It all depends on the size of the muffin tins you have.



These turned out fantastic! Kyle was surprised at how much he enjoyed them. These would be great for kids or for party finger food. These were also very quick and easy to make. You can alter the fillings and add olives or mushrooms, whatever you like on regular pizza :) The pepperoni ones were wonderful just by themselves.

Papa La Huancaina

This food is as fun to say as it is to eat! It is a traditional Peruvian food. It can be served as an appitizer to share or as the main dish. Word to the wise, this is spicy! If you like it a little more mild go easy on the pepper sauce. Do it to taste.


Ingredients



  • 6 potatoes

  • 1 bar Cream Cheese (traditionally you use a 1/2 round of queso fresco sold in any Latino store instead of cream cheese)

  • 20 Saltine crackers

  • 2 tbs Peruvian Yellow hot pepper sauce (Aji amarillo molido)

  • 2 cups evaporated milk

  • 1/8 cup oil

  • salt to taste

  • Hard boiled eggs

  • Large leaf lettuce

Directions



  1. Blend together milk, yellow hot pepper, crackers and cream cheese until well blended

  2. Next while blender is running add oil.

  3. Separately boil potatoes then peel and slice into rounds.

  4. Boil eggs

  5. To serve lay the boiled potatoes on a bed of lettuce leaves. Then pout creamy sauce over potatoes. Add sliced eggs on top and serve.

Zucchini Bread

Zucchini Bread

Ingredients




  • 3 cups all-purpose flour



  • 1 tsp salt



  • 1 tsp baking soda



  • 1 tsp baking powder



  • 3 tsp ground cinnamon



  • 3 eggs



  • 1/2 cup vegetable oil



  • 1/2 cup applesauce



  • 1 cup white sugar



  • 1 cup brown sugar



  • 3 tsp vanilla extract



  • 2 cups grated zucchini



  • 1 cup chopped walnuts


Directions



  1. Grease and flour two 8 x 4 inch bread pans. Preheat oven to 325 degrees F.



  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.



  3. Beat eggs, oil, applesauce, vanilla, and sugars together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined.



  4. Pour batter into prepared pans.



  5. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean.



  6. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.


My first attempt at this i didn't have any nuts so I put in chocolate chips. It didn't work out the best :( they made my bread stick to the bottom of the pan and so it didn't come out very clean. next time I will use the walnuts.


This bread came out moist and so yummy :) This is a great way to use up some of that huge supply of zucchini everyone has sitting around their house!

Sushi!!



Look at what I made :)

This doesn't have a recipe, its kind of a California roll. It has cucumber, imitaion crab, avacado, and cream cheese. It is rolled in sushi rice and a nori sheet.


This was like the third or fourth roll I did. It was fun learning to make sushi with Kyle :) It turned out pretty good. I'm going to try different and more fun rolls next :)

Quick Pizza Dough

Ingredients



  • 1 (.25 oz) package active dry yeast (2 1/4 teaspoons)


  • 1 teaspoon white sugar

  • 1 cup warm water


  • 2 1/2 cups flour


  • 2 tablespoons olive oil


  • 1 teaspoon salt


  • 1 teaspoon Italian seasoning (optional)


  • 1/4 - 1/2 teaspoon garlic powder (to taste/optional)



Directions



  1. Preheat oven to 450 degrees F (if using a pizza stone, preheat stone as well)


  2. In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 min.


  3. Stir in flour, salt oil. Beat until smooth. Let rest for 5 minutes


  4. Turn dough out onto a lightly floured surface and pat or roll unto a round. Transfer crust to a lightly grease4d pizza pan or baker's peel dusted with cornmeal. Spread with desired toppings and bake in oven for 15-20 minutes, or until golden brown. Let baked pizza cool for 5 min. before serving.

I love this crust recipe! It is so quick and easy, and it always turns out so good! It comes out fluffy and soft, yet when done on the pizza stone, it gives it a nice crisp bottom. Oh can I just say I love love love my pizza stone!? I got it for my birthday and I don't think I can do regular pizza in a pan again!



My friend Taylor and I made these 2 specific pizzas. Give us a break on the shape. I'm terrible at doing a round pizza, plus they were both baked on my new pizza stone, so we had a little trouble with getting it on the stone... ha ha :) but they both tuned out wonderful. The first one is a chicken artichoke pizza with a garlic butter sauce. The second is your basic Hawaiian pizza.

Baked Chicken Nuggets


Ingredients



  • 3 skinless, boneless chicken breasts

  • 1 cup Italian seasoned bread crumbs

  • 1/2 cup grated Parmesan cheese

  • 1 teaspoon salt

  • 1 teaspoon Italian seasoning

  • 2 teaspoons dried basil

  • garlic and onion powder to taste

  • 1/2 cup butter, melted

Directions



  1. Preheat oven to 400 degrees F

  2. Cut chicken breasts into 1 1/2-inch sized pieces.

  3. In a medium bowl, mix together the bread crumbs, cheese, salt, Italian seasoning, basil and onion and garlic powders. Put melted butter in a bowl or dish for dipping.

  4. Dip chicken pieces into the melted butter first, then coat with the breadcrumb mixture. Place the well-coated chicken pieces on a lightly greased cookie sheet in a single layer. Drizzle small amount of melted butter on the chicken.

  5. Bake for 20 min, or until no longer pink in the middle. I didn't flip them half way through this time, but I think they would turn out crispier if you did. :)

This was my first time trying this recipe. I modified it to my liking and this is my version of the recipe. Go here for the original recipe. Kyle loved them! He was a little unsure when i told him I was making chicken nuggets for dinner, but in the end it was a hit :) They were good dipped in BBQ sauce or marinara sauce, but you could use any favorite dipping sauce.


This was also really quick and easy to prepare. I got home at 5:30 and started cooking and we were almost done eating by 6:30. We ate this with some leftover rice and veggies we had in the fridge.

Cheese Cake



Cheese Cake


Ingredients


  • 1 8 0z. cream cheese bar



  • 1/3 cup lemon juice



  • 1 can sweetened condensed milk



  • 1 teaspoon vanilla



  • 10" graham cracker crust*



  • Cherry pie filling or topping of choice


Directions



  1. Soften cream cheese.



  2. Beat cream cheese until fluffy.



  3. Gradually add lemon juice, sweetened condensed milk and vanilla. Mix well.



  4. Pour into backed crust and chill.



  5. Top with pie filling of choice, and enjoy!!

* You can buy pie crust or make your own. For this one, I chose to use a store bought one, but homemade can defiantly be more yummy :)


I got this recipe from my aunt Laraine. It is a very quick and easy no bake cheese cake! It turned out really yummy.

Flash Roasted Crispy Ranch Chicken



Flash Roasted Crispy Ranch Chicken

Ingredients:



  • 1 can Condensed Cream of Chicken Soup



  • 1/2 cup milk



  • 1 envelope ranch salad dressing mix



  • 4 skinless, boneless chicken breast halves*



  • 1 1/2 cups finely crushed tortilla chips



  • 2 tablespoons margarine or butter, melted



Directions




  1. In a shallow dish mix soup, milk, and dressing mix. Reserve 1 cup for sauce.



  2. Dip chicken into soup mixture. Coat with tortilla chips.



  3. Place chicken on greased baking sheet. Drizzle with margarine. Bake at 400 degrees F. for 20 minutes or until chicken is no longer pink.



  4. In a small saucepan over medium heat, heat reserved soup mixture to a boil. Serve with chicken.

*You can make this with chicken tenders or even cut the breasts into strips.


This is a great way to use those left over crumbs in your chip bag! This is great for a quick and delicious meal, so easy to put together and it comes out so flavorful and juicy!

French Bread


French Bread

Ingredients


  • 2 pkg. or 4 1/2 tsp active dry yeast

  • 1/2 Cup warm water

  • 3 Tbs sugar (divided)

  • 2 Cups hot water

  • 1/2 Cup oil

  • 1 Tbs salt

  • 6 Cups flour

Directions



  1. Combine yeast , 1 Tbs sugar, and 1/2 cup warm water and let sit for 5-10 minutes until it gets frothy

  2. Add 2 cups hot water, oil, 2 Tbs sugar, and salt.

  3. Slowly start to add flour 1 cup at a time. Mix well.

  4. Cover bowl with a towel and let rise in a warm place for 10 minutes. Stir down and re-cover. you will repeat this step 5 times.

  5. Knead dough 10 times.

  6. Separate dough into 2 balls and form into 2 loaves

  7. Place on a cornmeal lined cookie sheet and with a sharp knife cut 3 diagonal lines in each loaf.

  8. Let rise for 10 minutes and bake at 400 degrees for 20 minutes.

I've made this several time and it always comes out so yummy! Depending on the meal we are eating with it I will add different seasonings to alter the flavor a little. This time I added Italian seasoning and garlic powder. I also like the top brushed with butter and sprinkled with ta little cheese before its baked!

Chicken Cordon Bleu

Ingredients
  • 4 chicken breasts
  • 4 slices of ham
  • 4 slices Swiss cheese
  • Garlic Salt
  • Italian seasoned bread crumbs
  • 2 Tbs butter

Directions
  1. Place chicken breast in Ziploc bag and pound about 1/4-1/2 inch thick with a meat hammer, or you can even use a can of soup. (I use the soup and then make a sauce with it)
  2. Once you have all the breasts done place a slice of ham and cheese on the chicken smooth side down.
  3. Sprinkle garlic salt on cheese and roll up chicken starting at the wide end. Secure with a toothpick.
  4. Melt butter and roll the chicken breasts in butter.
  5. Take bread crumbs and place on a plate then roll buttered breasts in the crumbs. Place in a greased glass baking dish
  6. Pour remaining butter over chicken.
  7. Bake at 350 degrees for about 30-35 min or until chicken is no longer pink and juices run clear.

Sauce

Ingredients

  • Cream of Chicken soup (I use mine to pound the chicken)
  • Milk
  • 1/4 cup Sour cream
  • Italian seasoning
  • Garlic powder

Directions

  1. Mix together soup, milk and 1/4 cup sour cream in a sauce pan over medium heat. I just add enough milk to get the consistency that I like.
  2. Add Italian seasoning and Garlic powder to taste. (I do 2 shakes of Italian and a sprinkle of Garlic powder)
  3. Heat till bubbly and heated through. Pour over chicken when serving. I also like to put the sauce on a rice pilaf or mashed potatoes that i serve with the chicken.

This is one of Kyle's favorite dishes that I make. This chicken is super good and pretty easy to make. It's a perfect way to have a homemade gourmet meal!

Hot Artichoke and Spinach Dip

Ingredients:
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/2 pre-shredded Italian blend cheese
  • 1 clove garlic, peeled and minced
  • 1/2 tsp dried basil
  • 1/4 teaspoon garlic salt
  • salt and pepper to taste
  • 1 (14 ounce) can/jar artichoke hearts, drained and chopped
  • 1/2 cup frozen chopped spinach, thawed and drained
  • 1/4 cup shredded mozzarella cheese

Directions:

  1. Preheat oven to 350 degrees F. Lightly grease a small baking dish.
  2. In a medium bowl, mix together cream cheese, mayonnaise, Parmesan cheese, Romano cheese, garlic, basil, garlic salt, salt and pepper. Gently stir in artichoke hearts and spinach.
  3. Transfer the mixture to the prepared baking dish. Top with mozzarella cheese. Bake in preheated oven 25 minutes, until bubbly and lightly browned.
Notes: This is a high fat recipe so to cut the calories a bit I made just a few small changes. Instead of using straight mayo I used half light sour cream and light mayo. I used low fat cream cheese.

This has become one of my favorite things to bring to parties now! I served this for the Olsen's Christmas Eve party and from the time I took it out of the oven and put it on the table it was gone within 5 minutes. I almost didn't get any! I didn't even get my picture, so I had to make another batch for my family the next day so I could get some pictures!

Even if you are not an artichoke fan you will probably like this! Try this out and let me know how it goes!! It is such a wonderful dip!
